- red and yellow mini tomatoes600 g
- crystal sugar200 g
- rice vinegar400 ml
- thyme stalks6 unit(s)
- coriander seed3 tablespoon
- In a shallow pan, heat the coriander seeds to release the essential oils. Then pour the vinegar and sugar and leave it on the fire until it becomes a homogeneous liquid (10 minutes are enough).
- Pierce the tomatoes with a toothpick and place in a sterilized jar along with the thyme sprigs and cover with the sweet and sour liquid.
- Ready. Remembering that the longer the canning rests, the tastier it will be. In the fridge, the pickle should last up to 1 month and can be used in different preparations such as sandwiches, bruschetta and toast.
