Sweet and sour mini tomato pickles

  • red and yellow mini tomatoes600 g
  • crystal sugar200 g
  • rice vinegar400 ml
  • thyme stalks6 unit(s)
  • coriander seed3 tablespoon
  1. In a shallow pan, heat the coriander seeds to release the essential oils. Then pour the vinegar and sugar and leave it on the fire until it becomes a homogeneous liquid (10 minutes are enough).
  2. Pierce the tomatoes with a toothpick and place in a sterilized jar along with the thyme sprigs and cover with the sweet and sour liquid.
  3. Ready. Remembering that the longer the canning rests, the tastier it will be. In the fridge, the pickle should last up to 1 month and can be used in different preparations such as sandwiches, bruschetta and toast.
