  1. Making Tahini (roasted white sesame paste) is simple. Just beat the toasted sesame in a blender or food processor until you get a paste. The more you hit the smoother it will be. There are some ready-made tahini brands on the market, but homemade tahini has a special flavor.
  2. Roast the eggplants on hot coals, on the stove or in the oven. On the grill they are the best but if your case is the stove then rotate the eggplants on top of a grid on top of the stove burner until they are soft taking care not to burn too much. It should take about 20 minutes. If you are going to bake in the oven, use a roasting pan and the oven hot for half an hour then lower the oven to medium, turn the eggplants and bake for another 30 minutes. Remove and let cool a little.
  3. Finely chop the garlic clove, mix with the salt and with the help of the side of a knife, squeeze the mixture into a paste.
  4. Remove the skins from the eggplants with the help of a spoon and squeeze the juice of half a lemon over the pulp. Finely chop until it turns into a paste or hit the blender/processor. More chunky or smoother is to taste. Add the garlic paste with salt, the tahini and mix well to dissolve the tahini and obtain a homogeneous paste.
  5. Place in the fridge for at least an hour. Cover with the oil and serve with toast, flatbread or a salad.
