  • Garlic100 g
  • Onion250 g
  • Extra virgin olive oil300 ml
  • Washed Potato500 g
  • Corn oil1 l
  • Fresh cream1 l
  • Cooked rice500 g
  • Butter200 g
  • Girl's Finger Pepper2 unit(s)
  • Washed and chopped parsley with stalk1 cup
  • Washed and chopped coriander1 cup
  • Organic eggs4 unit(s)
  • Cyboulete for decoration to taste
  1. Clean the cod after desalting, and cut into cubes (important: do not cook), reserve.
  2. Peel the garlic and cut the onion into julienne; in two separate pans, confte the garlic submerged in oil without boiling; and pull the onion in olive oil until it is well caramelized and wilted; Reserve
  3. Wash the potato and cut into thin sticks, as for French fries; Reserve
  4. In a pan add the candied garlic, the caramelized onion and the cream, let the cream cook until the cream is reduced by half; fry the potato in parallel; Add the desalted cod and then the rice, stir very gently so that the cod remains very large, when it starts to loosen the flakes, add the cheese, the butter, the herbs and chopped pepper, adjust the salt and pepper and Lastly, add the crispy fries! Serve immediately with a generous drizzle of olive oil, chopped chives and one cracked egg per person!
