Pork ribs1 kg
Potato1 kg
Corn flour200 g
Cassava Flour200 g
Shoyu50 ml
Garlic20 g
Onion100 g
Rosemary5 g
Tomato100 g
Lime1 unit(s)
Corn Starch50 g

Season the ribs at least half an hour before roasting, make a marinade with garlic, onion, lemon, rosemary, tomato and soy sauce. Place in the oven with aluminum foil on top. Leave for an hour and a half. Then let it gold without the paper. If it's not soft, leave it longer.
Remove from the oven. Take this sauce reduction and put it in a pan. Bring to a boil and add water and soy sauce. Add starch to give shine and density to the sauce.
Cook the potatoes and make a puree with butter and milk.
Farofa: in the pan put onion and garlic and sauté, add the flour and stir, finish with parsley if you have it.
Mount your plate and help yourself!
