- Pork ribs1 kg
- Potato1 kg
- Corn flour200 g
- Cassava Flour200 g
- Shoyu50 ml
- Garlic20 g
- Onion100 g
- Rosemary5 g
- Tomato100 g
- Lime1 unit(s)
- Corn Starch50 g
- Season the ribs at least half an hour before roasting, make a marinade with garlic, onion, lemon, rosemary, tomato and soy sauce. Place in the oven with aluminum foil on top. Leave for an hour and a half. Then let it gold without the paper. If it's not soft, leave it longer.
- Remove from the oven. Take this sauce reduction and put it in a pan. Bring to a boil and add water and soy sauce. Add starch to give shine and density to the sauce.
- Cook the potatoes and make a puree with butter and milk.
- Farofa: in the pan put onion and garlic and sauté, add the flour and stir, finish with parsley if you have it.
- Mount your plate and help yourself!
