  • Black-eyed Beans1 cup
  • Polished white rice1 cup
  • Chopped Onion1/2 unit(s)
  • Sunflower oil1 tablespoon
  • Salt1/2 teaspoon
  • Bay leaves2 unit(s)
  • Coalho cheese in pieces300 g
  • Diced Bacon1.1/3 cup
  • Garlic cloves, sliced2 unit(s)
  • Sour cream (box)1/2 unit(s)
  • Bottled butter or unsalted butter3 tablespoon
  • Sliced chives to taste
  • Coriander leaves to taste
  • Salt to taste
  • Black pepper to taste
  1. Start by desalting the meat, cut it into large cubes and put it in a bowl of water, covered, in the fridge for 24 hours. Discard the water at the end.
  2. In the pressure cooker, cover the meat with water and cook over high heat with 1 bay leaf. As soon as it sizzles, lower the heat and count 40 min. Release the pressure, separate the meat and discard the water.
  3. Meanwhile, prepare the rice. Heat a teaspoon of oil, brown the garlic slices, add the rice and sauté for 2 min. Add 2 cups of boiling water and salt to taste. Leave the pan semi-covered to cook on medium/low heat for about 12 min.
  4. To cook the black-eyed peas, add the beans and 3 more cups of water, with 1 bay leaf. Let it cook for only 7 minutes after it gets pressure. Discard the water.
  5. Enjoy while beans and rice are cooking to shred the meat, cut the bacon and onion into cubes.
  6. In a large, unwashed skillet, heat 2 tablespoons of butter and brown the onion. Add the bacon cut into small cubes, letting it brown slightly. Add the shredded beef and the cooked black-eyed peas. Saute for 3 min.
  7. Put the cooked rice, and 2/3 of the golden coalho cheese, mix gently. Adjust salt and pepper to taste.
  8. Cut the chives and cilantro.
  9. If you like the creamy baião de 2, now you can add cream or sour cream. Cook for 1 min. just to warm up and turn off the heat. Add the chopped chives and cilantro.
  10. Finish with the rest of the golden coalho cheese, pout pepper and coriander leaves.

The name baião de dois is inspired and references a song with the same name, baião de dois, released in a composition and singing partnership between composer Humberto Teixeira and the acclaimed Luíz Gonzaga.
