- Oat milk1 cup
- Flour2 cup
- Oil1/2 cup
- Brown sugar1 cup
- Baking powder1 teaspoon
- Pinch of cinnamon to taste
- Pinch of salt to taste
- Grated zucchini, reserve.
- Whisk together oil, milk, sugar,salt and cinnamon.
- Add flour and baking powder, combine well.
- Butter a baking pan and pour batter.
- Bake in pre-heated oven (350 °F) for 30 minutes or until risen and golden.
