- Chuchu cubes2 unit(s)
- Chopped Parsley1/2 unit(s)
- Chopped Mint1/2 unit(s)
- Avocado1/2 unit(s)
- Lemon1 unit(s)
- Filtered water40 ml
- Sunflower oil80 ml
- Salt to taste
- Put the carrot and the chayote to cook in salted water until stay soft.
- When the vegetables are almost done cooking, add the plantains to cook quickly. Drain and put in the fridge.
- In a blender, add the mayonnaise ingredients, except the oil, and blend until smooth.
- Then, with the blender on, add the oil until the mixture is shiny and creamy. Reserve.
- In a large bowl, add the cooked vegetables, plantain, fresh spices and salt. Add mayonnaise according to your taste.
- Mix well and leave in the fridge to serve cold.
