  • Rice Flour1 cup
  • Chickpea Flour1/2 cup
  • Potato Starch1/2 cup
  • Boiled Yam2 tablespoon
  • Flaxseed Flour2 tablespoon
  • Orange Juice1 cup
  • Vegetable Milk1 cup
  • Coconut Oil1/2 cup
  • Apple Cider Vinegar1 tablespoon
  • Sodium Bicarbonate1 coffee spoon
  • Chemical Yeast1 tablespoon
  • Lemon Zest to taste
  • Demerara sugar1 cup
  • Corn starch2 tablespoon
  • Demerara sugar for the syrup2 tablespoon
  1. Sift the flours
  2. Mix the dry ingredients, minus the yeast and starch
  3. Mix the mashed yam
  4. Mix coconut oil
  5. Mix 1/2 cup of orange juice
  6. Add 1/2 cup of vegetable milk, add vinegar and yeast. Gently mix
  7. Put in greased shape and take it to the preheated oven at 180 degrees for 30 min.
  8. Test with a toothpick if it is baked
  9. Let cool
  10. make the syrup
  11. Mix the milk, juice, starch and sugar.
  12. Cook over low heat, stirring constantly, until thickened.
  13. Spread over the cake
