  • cashew nuts1 cup
  • water250 ml
  • demerara sugar3/4 cup
  • coconut sugar1/4 cup
  • vanilla extract2 tablespoon
  1. Boil the chestnuts in water for 15 minutes, discard this water and wash well.
  2. Beat the chestnuts in the blender with the rest of the ingredients, until a very smooth cream is formed.
  3. Transfer to a pan and stir over medium/low heat, until a thicker cream forms. After it cools, it gets even firmer.
