  • Flour 00270 g
  • White wine65 ml
  • Olive oil75 ml
  • Salt10 g
  • Fennel seed10 g
  1. In a pot put 270g of flour 00
  2. Add salt and fennel seeds
  3. Make a hole in the middle and pour the white wine into it.
  4. Start mixing and slowly add the olive oil
  5. Knead the dough until smooth
  6. Put the dough in the fridge for 30 min.
  7. Remove the dough from the fridge. Take pieces of dough and make small rolls with them.
  8. Join the two ends of the rolls
  9. Put water in a deep pan and let it boil. Place the rolls in the boiling water. Take the rolls out of the water when they float. (1 minute and a half)
  10. Place the boiled cookies on a towel to dry. Let it dry for a while (preferably overnight, but 2 hours is enough). The longer they dry, the more crumbly (friabile) the cookie will be.
  11. Preheat oven to 180 degrees C for 10 min. Bake the cookies for 30 minutes.
  12. Let cool and eat!
