  • Soaked black beans500 g
  • Chopped Onion1/2 cup
  • Chopped Garlic1 dessert spoon
  • Bay leaf1 unit(s)
  • Olive oil1 tablespoon
  • Carrot cut into 3cm slices1.5 unit(s)
  • Peeled pumpkin, cut into medium cubes2 cup
  • Chuchu cut into medium cubes1.5 cup
  • Peeled sweet potato, cut into 2cm slices1 cup
  • Chopped green onion1/4 cup
  • Salt to taste
  • Ground black pepper to taste
  1. In a pressure cooker add the beans and bay leaf. Cover with water and close the pan.
  2. Take to the fire to cook for 15 minutes after opening pressure.
  3. In a pan heat the oil and brown the onion and garlic.
  4. Add 2 shells of already cooked bean grains to the sauté pan and mix well.
  5. Add the remaining beans to the pan, season with salt, pepper and mix. Add more water if necessary.
  6. Add the sweet potato and chayote and cook until al dente.
  7. Add the pumpkin and carrot and cook until all the vegetables are fully cooked, add more water if necessary. Adjust the salt.
  8. Finish with the green onion and serve immediately.
