  • Oil200 ml
  • Salt to taste
  • Garlic2 unit(s)
  • Lemon - juice1 ml
  1. Turn on the stove burner, preferably the small one, place the eggplant on the stove burner and with the help of a fork, turn it so that all sides are burnt. Reserve
  2. In the blender add the milk, salt, garlic and lemon, beat until blended.
  3. Add the oil little by little.
  4. When it starts to get difficult to mix, add the eggplant.
  5. Remove the stem from the eggplant, mash it and put it in the blender, if it is organic, you can put the skin on it, if not, the skin needs to be removed.
  6. Let it mix some more and it's ready.
  7. Place in the fridge to thicken.
