Red Lentil and Roasted Tomato Pate

  • Cooked red lentils2 cup
  • cherry tomato200 g
  • Garlic Head1 unit(s)
  • Olive oil1/4 cup
  • Lentil cooking water1/2 cup
  • Tahini1 tablespoon
  • Smoked paprika1/2 tablespoon
  • Oregano1 coffee spoon
  • Apple Cider Vinegar1 tablespoon
  • Salt to taste
  1. Cut the tomatoes in half, smear them with oil and place on a baking sheet.
  2. Cut the top off the garlic, wrap in aluminum foil and drizzle with oil, closing the foil afterwards, as in a package. Arrange on the baking sheet next to the tomatoes.
  3. Roast the tomatoes and garlic in an oven at 200 degrees for about 30 minutes or until the garlic is tender.
  4. After this period, reserve the tomatoes and carefully remove the cooked garlic cloves from the skin. Reserve.
  5. In a blender add the cooked lentils, water, olive oil, tahini, paprika, oregano, tomatoes, garlic, vinegar and salt and blend until smooth.
  6. Serve with crackers, toast, bread or whatever else you like.
