  • Diced Mango2 cup
  • Coconut milk1 cup
  • Cane molasses2 tablespoon
  • Corn starch2 tablespoon
  • Agar-agar powder2 teaspoon
  • Lemon (zest and juice)1 unit(s)
  • Passion Fruit Juice3 tablespoon
  1. Place the cubed mango, coconut milk and cane molasses in a blender and blend for a few seconds or until smooth. Taste and adjust the molasses to your liking.
  2. Transfer to a medium saucepan. Add the cornstarch, agar-agar, lemon juice and zest to the pan. Whisk to dissolve the cornstarch and agar.
  3. Heat over medium heat, stirring constantly until boiling. After boiling, remove from heat and add passion fruit juice. Let cool 2-3 minutes before pouring into pans or ramekins.
  4. Let cool at room temperature for about 10-15 minutes before transferring to the fridge. Leave in the fridge for at least six hours before eating.
