  • Cooked white rice2 cup
  • grated carrot100 g
  • Sliced red cabbage100 g
  • grated zucchini50 g
  • Cooked chickpeas100 g
  • Porto Belo Mushroom100 g
  • Firm Tofu50 g
  • Tofu in slice50 g
  • grated ginger1 dessert spoon
  • Diced Red Onion1 unit(s)
  • Hache garlic1 unit(s)
  • Olive oil to taste
  1. Fry the onion in oil and then add the garlic and ginger. Sauté a few more minutes, add the tofu and let it brown. Add the mushrooms and wait until they wilt.
  2. Start with the carrot, then the cabbage and finally the zucchini. When everything is sautéed, add the rice and the cooked chickpeas and stir well to loosen it up. Mix the sauce, stir to involve and adjust the salt.
  3. Sauce: 3cs of substitute for shoyu @origemtemperos (you can also use normal low-sodium shoyu) 1 tbsp mirin (or sugar) 1 tbsp rice vinegar (or apple) 1 tbsp umami sauce @origemtemperos Pepper sauce to taste or PRP (if you want you can use oyster sauce or nampla to make a more Thai version) 1 tbsp sesame oil (it will give the dish even more Asian flavor) Mix everything and pour over the rice.
  4. For the tofu steak: grill the marinated tofu in a very hot skillet. Then slice and serve on top. For marinade, use miso, paprika, sesame oil, lemon juice, pepper...
  5. Serve the fried rice with the tofu on top and chives.
