- mashed dwarf banana1/2 unit(s)
- Oat flour4 tablespoon
- Medium flaked oats1 tablespoon
- Fennel Infusion4 tablespoon
- Fig1 unit(s)
- Sodium Bicarbonate1 teaspoon
- Fennel infusion: 200ml of water and 1 tbsp of fennel. When the water boils, turn off the heat and add the fennel. Leave to infuse for 5 minutes.
- Dough: Mix the mashed banana, mashed fig, flour and bicarbonate. Place the tablespoons of the fennel infusion and 1/2 of the herb in the infusion. Mix everything until you get a thick cream. The amount of liquid (fennel tea) is intuitive, keep adding until you get a thick mass. Grease a frying pan with olive oil or coconut oil, pour the dough and let it brown on both sides. Tip to find the right spot: when you start poking holes in the dough as if they were air bubbles, it's time to turn to brown the other side.
- Topping: add molasses on top and fig pieces. Coconut also pairs well with fig.
