Ingredients: 3/4 cup Cooked Butter Beans; 2 cup Eggplant cut into small cubes; 1/2 cup Diced red and yellow bell pepper; 1/3 cup Chopped Onion; 1 dessert spoon Chopped Garlic; 12 unit(s) Pitted green olives; 1/4 cup Olive oil; to taste Sea Salt; to taste Ground black pepper

Cooked Butter Beans3/4 cup
Eggplant cut into small cubes2 cup
Diced red and yellow bell pepper1/2 cup
Chopped Onion1/3 cup
Chopped Garlic1 dessert spoon
Pitted green olives12 unit(s)
Olive oil1/4 cup
Sea Salt to taste
Ground black pepper to taste

Mix all the ingredients in a baking dish and place in a preheated oven at 220ºC to bake for about 25 minutes (stir a few times during this time to avoid burning).
Remove from the oven, let cool and transfer to a container, cover with olive oil, cover and refrigerate for at least 4 hours before serving, ideally overnight.
