- The first step is to soak the chickpeas for 8 hours and periodically change the water. *However, if you didn't see the recipe the day before, make the soaking as follows: heat water in a pan and let it boil, after that, add the chickpeas for 20 minutes and then dry it well*
- In a food processor (or blender) you will add the chickpeas and beat until it starts to release its oil and form a paste.
- Add the onion and garlic cloves little by little and alternate with processing.
- Add the black pepper, chili pepper and tahini (if any) and continue beating.
- Add the lemon juice and the mint continue beating.
- When the mixture forms a paste, remove it from the food processor and place in a deep bowl. At this point, add the parsley, chives and cilantro. And mix with your hands doing a job similar to kneading bread.
- Add the sesame and continue the work of mixing the dough with your hands.
- Make balls or hamburgers and fry them
