- Firm Tofu300 g
- Red Pepper1 unit(s)
- Yellow pepper1 unit(s)
- Onion1 unit(s)
- Shoyu1/2 cup
- Cornstarch (dissolved in 1 cup of water)1 tablespoon
- Roasted skinless peanuts1 cup
- Seasonings to taste
- Start by chopping the onion and peppers (without the seeds and the white part) into small cubes. Also drain excess water from the tofu and cut into cubes.
- Sauté the onion in a little oil until wilted. Add the peppers, salt and black pepper, stir well and sauté for 5 minutes, stirring occasionally to prevent sticking. Add the tofu and soy sauce, stir gently to incorporate and cook for another 5 minutes. If you want to make it with chicken, add the chicken (seasoned with a little salt and pepper) and let it cook completely before adding the soy sauce. Add the soy sauce and cook for another 5 minutes.
- Add the dissolved cornstarch and stir gently until the sauce thickens. Turn off the heat, add the peanuts and serve with white rice!
