Carrot noodles with white lemon sauce

  • Cashew nuts soaked in water for 4 hours1/2 cup
  • Lemon1 unit(s)
  • Garlic1 unit(s)
  • Salt and pepper to taste
  1. Wash the carrots, scrape the skin. Make strips imitating wide noodles with the food peeler itself.
  2. Fill a pan with water and place the carrot strips and bring to a boil for 3 minutes. Drain and reserve.
  3. Throw out the water just soak the cashews, wash them well.
  4. Place the washed cashew nuts in a blender with 1 cup of water and blend until it forms a thick liquid like a cream.
  5. Chop the garlic and put it in a large skillet with olive oil and touch it until it starts to brown.
  6. Add the pre-cooked carrot and stir to get the flavor. Saute for 3 minutes. Squeeze the juice of half a lemon, sprinkle with salt and pepper.
  7. Add the cashew nut milk cream and stir.
  8. Finish with lemon zest.
