- Black rice1/2 cup
- Garlic Cloves2 unit(s)
- Chopped red onion2 tablespoon
- Pupunha heart of palm100 g
- Salt to taste
- Olive oil to taste
- Basil for garnish to taste
- Herbs for garnish to taste
- Rice: Soak in boiling salted water for 12 minutes. Drain and reserve the liquid.
- In a pan, sauté the garlic and onion in oil. Add the rice and 100 ml of the reserved liquid. Salt. If necessary add more water. The rice is very al dente.
- Wrap the pupunha seasoned with oil and salt in aluminum foil. Bake for 1 and a half hours in the medium oven.
- After baking, cut into cubes and mold over the rice.
- Garnish with tomato and herbs. Help yourself!
