  • Beetroot2 unit(s)
  • Garlic Cloves2 unit(s)
  • Lemon juice4 tablespoon
  • Salt to taste
  • Black pepper to taste
  • Olive oil to taste
  • Zaatar to taste
  • Tahini3 tablespoon
  1. Soak the chickpeas overnight - ideally for 24 hours
  2. Cook the chickpeas in boiling water for 20 minutes.
  3. Reserve the cooking water
  4. Peel the beets and cut into 1 cm cubes
  5. Season the beetroot cubes with salt, pepper and olive oil to taste.
  6. Bake the beetroot cubes for 30 minutes at 200 degrees - so that they take on a smoky flavor
  7. In the blender, add the cooking water with the chickpeas, roasted beetroot cubes, tahini, garlic and salt.
  8. Blend until you get a pasty and more homogeneous texture - if necessary, add more water to blend the ingredients.
  9. Place in a bowl and sprinkle the zaatar over the paste in the preferred amount.
