- Chickpeas2 cup
- Beetroot2 unit(s)
- Garlic Cloves2 unit(s)
- Lemon juice4 tablespoon
- Salt to taste
- Black pepper to taste
- Olive oil to taste
- Zaatar to taste
- Tahini3 tablespoon
- Soak the chickpeas overnight - ideally for 24 hours
- Cook the chickpeas in boiling water for 20 minutes.
- Reserve the cooking water
- Peel the beets and cut into 1 cm cubes
- Season the beetroot cubes with salt, pepper and olive oil to taste.
- Bake the beetroot cubes for 30 minutes at 200 degrees - so that they take on a smoky flavor
- In the blender, add the cooking water with the chickpeas, roasted beetroot cubes, tahini, garlic and salt.
- Blend until you get a pasty and more homogeneous texture - if necessary, add more water to blend the ingredients.
- Place in a bowl and sprinkle the zaatar over the paste in the preferred amount.
