  • Boiled yam without shell2 unit(s)
  • sour starch1 cup
  • Tapioca2 tablespoon
  • Nutritional yeast2 teaspoon
  • Olive oil1/4 cup
  • Saffron1 teaspoon
  • Chia to taste
  • Salt to taste
  1. Cook the peeled potatoes until they are very soft.
  2. In a mixing bowl, mash and mix the potatoes well.
  3. Add dry ingredients and mix
  4. Add the oil and salt last and mix well.
  5. Note: save the cooking water of the potatoes in case you need to add a little water to your pasta
  6. Let the mixture rest for 30 minutes in the fridge.
  7. Preheat the oven for 10min
  8. Form your balls the size you want and grease a large shape with olive oil placing the balls in it.
  9. Leave them on low heat 180° for 30min always keeping an eye on them.
