- Cooked adzuki beans1 cup
- Cooked Quinoa1 cup
- Sunflower seed1 cup
- Chimichurri1 tablespoon
- Smoked paprika1 tablespoon
- Dehydrated Garlic and Onion1 tablespoon
- Vegan gluten-free bread crumbs (or regular bread)1/3 cup
- Vegan BBQ Sauce or Vegan Ketchup2 tablespoon
- Salt1/2 teaspoon
- Black pepper to taste
- Demerara or brown sugar1 tablespoon
- Olive oil (for pasta)1 tablespoon
- Toast the sunflower seeds in a skillet until golden.
- In a mini food processor or coffee grinder, grind the seeds with the chimichurri, paprika, and dry garlic and onion until it forms a thick powder.
- In a bowl, place the bread crumbs with the seed powder and seasonings, mixing everything together. Reserve
- In a food processor, blend the adzuki beans and quinoa.
- Mix it with the reserved bowl, adding the barbecue sauce, olive oil, salt and pepper.
- Mix everything well until it becomes a moldable dough. If it's too wet, add more bread crumbs. If it's too dry, add a little more water.
- Portion and shape the dough using cup measurers, ice cream scoop or even your hands (as I show in the video).
- You can freeze them like this, so you can bake and eat them little by little.
- You can bake them in the oven at 180°C for 15min or until they are golden on the rim or bake them in a skillet heated with a drizzle of olive oil, browning both sides.
