  • Apricot1 unit(s)
  • Egg1 unit(s)
  • Skimmed milk0.5 cup
  • Wheat flour1 cup
  • Olive oil2 tablespoon
  • Baking powder1 tablespoon
  • Grated Parmesan50 g
  • Salt to taste
  • Pepper to taste
  1. Grate the zucchini and squeeze it well with a dish towel to drain the excess water.
  2. Add the lightly beaten eggs, milk, Parmesan cheese, salt, pepper, oil and wheat flour. Mix well and add the baking powder.
  3. Place in a bread pan or in cupcake or pie molds and bake in a medium oven for about 20 minutes.
  4. Tip: serve with a slice of white cheese!
