- Cream cheese175 g
- Ham175 g
- Olive oil3 tablespoon
- Lemon Juice1 tablespoon
- Chives to taste
- Salt to taste
- Cut the zucchini lengthwise, making thin slices, but not so thick as to tear. It's best to slice on a mandoline. Pass a little salt on each side, and let the zucchini sweat.
- After 20 minutes, wipe off excess salt and dry with a paper towel or dish towel.
- Fry the zucchini slices in a non-stick frying pan with a little oil on each side, until lightly golden (the heat must be high). Book and remove excess oil with towel paper.
- Spread a thin layer of cream cheese (or whatever pate you prefer), and strips of ham. Roll the zucchini until it forms a small “rocambole”. Be careful not to get too loose.
- Mix the olive oil with the lemon juice, salt, black pepper and beat with a fork until as blended as possible.
- Serving up: lay out the zucchini rolls and pour the sauce on top. Cut the chives however you want to put on top.
