Wholemeal Sicilian Lemon and Brazil Nut Bread

  • Whole wheat flour200 g
  • Salt8 g
  • Organic Dry Yeast4 g
  • Water250 ml
  • Whole milk60 ml
  • Sunflower oil40 ml
  • Zest of 1 lemon1 unit(s)
  • Brazil nuts50 g
  1. Add the flours, salt and yeast in a large bowl or basin. Mix well.
  2. With a spoon, make a hole in the mixture and add the water, milk and oil. Mix from the center, pulling the flour from the sides little by little until you get a uniform dough. Let the dough rest for 10 minutes. Then, knead for 20 minutes or until the dough is smooth and no longer sticks to your hands. During the kneading, it is possible that you add a little flour until you reach the desired point.
  3. After the 20 minutes of kneading, let the dough rise on a clean and floured bench covered with a clean cloth for about 1:30 hours or until it doubles in volume.
  4. Once the dough has doubled in volume, squeeze it lightly so that some air comes out. With it still open, evenly distribute the crushed chestnuts and the zest of 1 Sicilian lemon. Then pull each side of the bun to the center, causing tension in the bun and until the filling is all covered. Turn the loaf and form a tight ball (tip: use the sides of your hands, in line with your pinky finger, at the base of the loaf. As one hand slides forward, the other pulls the dough back.).
  5. Preheat the oven to 240° and place the dough on an oiled aluminum platter, cover with a cloth and let it rest for 45 minutes while the oven heats up.
  6. After 45 minutes, sprinkle the dough with flour and with a sharp knife or a blade, make a quick and light cut in the dough from end to end.
  7. Put the bread in the oven for 25 minutes at 240o, then lower the temperature to 180o and leave for another 20 minutes. To know if the bread is baked, tap the bottom of it, as if you were knocking on a door and the sound should come out as if it were hollow.
  8. Once baked, let the bread cool on a wire rack or even on top of the oven. It continues to bake after it comes out of the oven.
