  • Rice flour or other gluten free110 g
  • Potato Starch đŸ„”30 g
  • Sweet starch oui u cassava starch20 g
  • Xanthan Gum2 g
  • Lactose-free butter70 g
  • Vanilla Extract1 to taste
  • Demerara sugar110 g
  1. *To make SouDough Cookies Add 60g of active gluten-free levain to the recipe.
  2. To make it with chemical yeast, add 2g to the recipe.
  3. If using levain, let the dough rest for an hour before kneading again and forming cookies.
  4. Mix the dry ingredients. Beat the eggs with the sugar and lactose-free butter (can be Ghee or coconut butter).
  5. Making a very homogeneous mass.
  6. Make balls and find them. Place the Cookies on a platter with two fingers space between them.
  7. Decorate with chocolate chips đŸ«đŸ˜‹
  8. Bake at 180 degrees until firm, about 15/20 minutes.
