Toast with tomato, cucumber, roast beef and cream cheese (Helena Furtado)

- Large ciabatta bread2 unit(s)
- Cream cheese4 tablespoon
- Parsley to taste
- Cucumber1 unit(s)
- cherry tomato1 cup
- Roast beef or carpaccio10 unit(s)
- Salt to taste
- Butter to taste
- Honey to taste
- Olive oil to taste
- Lemon zest to taste
- Grated Parmesan Cheese to taste
- Cut the cucumber into small cubes and cut each cherry tomato into 4 pieces. Season with salt and leave the mixture in a sieve to drain the water.
- Chop the parsley and mix with the cream cheese in the proportion you prefer. Parsley gives it a fresh flavor.
- Cut the bread into slices diagonally, butter it and put it on the griddle to brown and toast a little.
- After the slices have cooled, apply a layer of cream cheese, add the tomato and cucumber mixture (a final seasoning with salt and honey) and top with 1 slice of rost beef or carpaccio. (The original recipe goes for beef carpaccio). To finish: pass a thread of olive oil, put lemon zest and grated Parmesan cheese. I like to add a little more honey.
