Large ciabatta bread

Toast with tomato, cucumber, roast beef and cream cheese (Helena Furtado)

Cortar em cubos pequenos o pepino e cortar em 4 partes cada tomate cereja. Temperar com sal e deixar a mistura numa peneira para escorrer a água. 

Cut the cucumber into small cubes and cut each cherry tomato into 4 pieces. Season with salt and leave the mixture in a sieve to drain the water.

Picar a salsinha e misturar com o cream cheese na proporção que preferir. A salsinha dá um sabor fresco.

Chop the parsley and mix with the cream cheese in the proportion you prefer. Parsley gives it a fresh flavor.

Cortar o pão em fatias na diagonal, passar manteiga e levar à chapa para dourar e torrar um pouco. 

Cut the bread into slices diagonally, butter it and put it on the griddle to brown and toast a little.

Depois que as fatias esfriarem, passar uma camada de cream cheese, colocar a mistura do tomate e pepino (dar uma última temperada com sal e mel) e em cima colocar 1 fatia de rost beef ou carpaccio. (A receita original vai carpaccio de carne).

Para finalizar: passar fio de azeite, colocar raspas de limão e queijo parmesão ralado. 
Eu gosto de colocar mais um fio de mel. 

After the slices have cooled, apply a layer of cream cheese, add the tomato and cucumber mixture (a final seasoning with salt and honey) and top with 1 slice of rost beef or carpaccio. (The original recipe goes for beef carpaccio).

To finish: pass a thread of olive oil, put lemon zest and grated Parmesan cheese.
I like to add a little more honey.
