Tender skewers with caramelized peach

  • Baked Tender300 g
  • Gruyere cheese300 g
  • Firm Peach2 unit(s)
  • Olive oil1 dessert spoon
  • Butter1 tablespoon
  • Basil (leaf)20 unit(s)
  • Cane molasses1 tablespoon
  1. Cut the tenderloin into cubes of 1 to 1.5 cm. Heat a frying pan and add the oil and then the tender, browning the cubes quickly on each side. Reserve.
  2. Cut the peach in half, remove the seed. Cut into 1 cm wide slices and then in half again, leaving similar pieces to the one we cut the tender. Heat a skillet well and add the butter and then the peach, browning on both sides.
  3. Cut the gruyere cheese into cubes of 1 to 1.5 cm (same as tender). Reserve.
  4. To assemble, first place a cube of cheese, on top of a tender and then a piece of grilled peach. Stick a basil leaf on the toothpick and pierce through the peach to the cheese. Finish by watering with 1 spoon of cane molasses.
  5. SUBSTITUTIONS: replace the tender with ham, chicken, turkey breast, tomato, zucchini….
