  • Yeast flour200 g
  • Salt1 teaspoon
  • Olive oil20 ml
  • Milk1/2 cup
  • Lemon juice3 tablespoon
  1. First make a buttermilk; mix the milk with the lemon juice; wait a few seconds for the milk to curdle.
  2. Place the flour in a bowl (if you don't have any self-rising flour; add 2 teaspoons of Royal to the regular one); the salt; oil and buttermilk.
  3. Mix well and then integrate with your hands. Put on the table sprinkled with flour and knead (have more flour nearby if you need it; but go little by little). It should be a smooth mass without sticking but a little moist to the touch.
  4. Cut the dough and make balls the size of a golf ball (weight approx 60g). Cover with a damp cloth or plastic. Let it rest for about 15 min.
  5. After this time, take a non-stick frying pan and put it on high heat. While it heats up, stretch a ball from the center outwards and rotate until it is 2 mm thick and about 16 cm in diameter.
  6. Once the skillet is hot, take the disc and while it grows and forms bubbles (see video) stretch another ball. When brown spots begin to appear (without burning too much) turn with tweezers.
  7. Ready on both sides, place on a plate with a damp cloth or inside a plastic bag to keep moisture and not dry out. It's putting one on top of the other. Be careful with the last ones as the skillet will be very hot (lower the heat a little)
  8. Once cold you can eat with whatever stuffing you want and even roll up. The ones you are not going to eat can freeze inside a plastic freezer bag and take it with you. Just take off; wait for a few minutes to cool and use or heat it up in the microwave
