Quebre os ovos em uma panela e junte a manteiga ainda com o fogão apagado.

Break the eggs into a pan and add the butter while the stove is still off.

Acenda o fogo e leve a panela a ele mexendo sem parar com uma espátula.

Turn on the heat and bring the pan to it, stirring constantly with a spatula.

Quando estiver bem uniforme, retire a panela do fogo sem parar de mexer. Faça isso por 1 minuto e volte a panela ao fogo.

When it is uniform, remove the pan from the heat without stopping stirring. Do this for 1 minute and return the pan to the heat.

Repita o passo anterior pelo menos 3 vezes até os ovos ficarem com uma textura bem cremosa.

Repeat the previous step at least 3 times until the eggs have a very creamy texture.

Acrescente o iogurte natural (caso não consiga sour cream ou cream fraiche), a cebolinha, o sal e a pimenta do reino. Misture.

Add the natural yogurt (if you can't find sour cream or cream fraiche), the chives, salt and black pepper. Mix.
