- Red pepper10 g
- Yellow pepper10 g
- Green pepper10 g
- Girl's Finger Pepper2 g
- Salt15 g
- Brown sugar10 g
- Sicilian lemon1 unit(s)
- Olive oil to taste
- Basil to taste
- Rosemary to taste
- Oregano to taste
- Pitted Black Olives25 g
- Cut the eggplant into very thin strips and leave it in a sieve, with salt and sugar, draining the liquid that ssi for 1 hour
- Chop all the ingredients
- After 1 hour, wash the eggplant in running water and squeeze well to dry and not have water
- Mix all the ingredients, add the lemon juice, and cover with olive oil in a jar with a lid.
- Close and leave in the fridge for 24 hours
- Serve with toast
