  • Butter85 g
  • Self-raising flour250 g
  • Baking powder1 tablespoon
  • Golden caster sugar2 tablespoon
  • Buttermilk150 ml
  • Egg1 unit(s)
  • Clotted cream and jam to taste
  1. Preheat oven to 425°F
  2. Cover a flat baking tray with parchment paper
  3. In a bowl, mix butter and flour until it resembles breadcrumbs.
  4. Add sugar and baking powder, mix.
  5. In a separate bowl, mix egg and buttermilk.
  6. Add to the flour mixture and use a fork to stir all together into a soft dough.
  7. Tip the dough over a floured board, knead very lightly and roll it out. It should be around 1 inch think.
  8. Use a round cookie cutter to cut the scones and transfer carefully to the baking tray.
  9. Bake in the oven for 15 minutes or until slightly golden.
  10. Serve with clotted cream and jam.
