- Butter85 g
- Self-raising flour250 g
- Baking powder1 tablespoon
- Golden caster sugar2 tablespoon
- Buttermilk150 ml
- Egg1 unit(s)
- Clotted cream and jam to taste
- Preheat oven to 425°F
- Cover a flat baking tray with parchment paper
- In a bowl, mix butter and flour until it resembles breadcrumbs.
- Add sugar and baking powder, mix.
- In a separate bowl, mix egg and buttermilk.
- Add to the flour mixture and use a fork to stir all together into a soft dough.
- Tip the dough over a floured board, knead very lightly and roll it out. It should be around 1 inch think.
- Use a round cookie cutter to cut the scones and transfer carefully to the baking tray.
- Bake in the oven for 15 minutes or until slightly golden.
- Serve with clotted cream and jam.
