Pear, thinly sliced1 unit(s)
Butter to taste
Arugula (a few leaves) to taste
Dijon Mustard2 tablespoon
Honey1 tablespoon
Lemon1 unit(s)
Poached Egg2 unit(s)
Water1 l
Vinegar250 ml
Salt and Black Pepper to taste
Olive oil to taste
White cheese (optional)100 g

Butter the buns and place in the skillet to lightly toast.
Prepare the sauce by mixing the mustard, honey, a drizzle of olive oil, salt and pepper and spread over the buns.
Place the pear slices (squeeze a little lemon juice to keep from browning), put some slices of white cheese, a little more sauce, some arugula leaves and on top, the roast beef.
Poached Egg: Crack the egg into a bowl and set aside. Boil the water with the vinegar, lower the heat, stir the water until it forms a whirlpool and add the egg. Cook for 3 minutes and place in cold water.
Place the poached egg over the arugula and season with a little salt and pepper.
