- In a pan boil the milk. As soon as it boils, turn off the heat and add the lemon juice, stir for 5 minutes. The milk will “curd” forming small white lumps.
- Line a sieve with a very clean cloth and pour this mixture. Wrap the cloth into a small bag and squeeze the dough well until all the remaining liquid.
- Transfer the dough to a bowl with a lid and store in the fridge.
- If you want to give it a cheese shape, transfer the dough to a small plastic bowl and press down well with the help of a spoon. After 15 minutes, unmold the ricotta by turning the bowl onto a plate.
- Strained whey can be used in soups or broths. In addition to using salt, you can season the ricotta with dried herbs.
