Black pepper to taste
Colorau1 tablespoon
Mozzarella100 g
Olive oil to taste

Grate the potatoes very finely and soak in water for 10 minutes.
Meanwhile, place the eggs in a bowl, black pepper and mix well.
Remove the potato from the water and place together with the eggs, add the paprika and mix well.
In a frying pan, place half of the potatoes and put a lid and wait for 3 minutes.
Open the lid and place the mozzarella on top and add the other part of the potatoes on top.
Close the lid and leave for 6 minutes cooking and browning, turn and let the other side brown.
