- In a bowl, mix the grated potato, spinach, egg and seasonings.
- In a hot and greased skillet, pour the mixture until golden and then turn very carefully so as not to break it.
- Cover and cook for 2 minutes
- Uncover and place cheese to taste, sliced tomatoes and grains of your choice, cover again until the cheese melts, remove and serve.
