- Flour500 g
- Lard or olive oil130 g
- Water170 ml
- Salt1 tablespoon
- Baking soda1 teaspoon
- In a bowl, mix all the ingredients and knead to form a ball. Cover with plastic wrap and let it rest for 30 minutes. Knead some more, roll the dough into a thick sausage shape and cut into five pieces.
- Shape each piece into a ball, cover and let stand for 30 minutes. Open each piece into a thin round disc. Fry the skillet for 2 minutes on each side until the discs are slightly charred. Put the stuffing of your choice and fold it like a sandwich.
- Filling: Stracchino cheese (or your favorite cheese) Raw ham Arugula
