- Beat the egg well. In a frying pan on low heat add a thread of olive oil and cut the banana into 3 equal parts and then add the beaten egg and cheese around the banana. Wait for it to brown on one side, to turn it on the other side without breaking, I used a large slotted spoon, after it browned. Add cinnamon to taste.
