- Oat flakes or quinoa1 tablespoon
- Flaxseed or chia flour1 tablespoon
- Turmeric1 teaspoon
- Salt to taste
- Olive oil to taste
- In the bowl, place 1 whole egg and the white of the second egg (disregard the yolk).
- Add the linseed or chia flour, oat bran or quinoa, turmeric and salt. If you want, add a little milk to make it creamier (it can be regular or vegetable milk if you avoid lactose).
- Stir well with the help of a fork or fouet.
- Grease a frying pan with a little olive oil, just enough so that the omelet does not stick to the pan.
- Heat over medium to high heat and add the mixture.
- When the base is golden, turn and brown the other side.
- Tip: I use an omelette-type frying pan, it makes turning it a lot easier (and it’s also great for tapioca!)
