  • Sugar125 g
  • Vanilla Extract1 coffee spoon
  • Lemon zest1 unit(s)
  • Wheat flour155 g
  • Melted butter170 g
  • Eggs2 unit(s)
  • Chemical Yeast7 g
  • Frozen Raspberry200 g
  • Sugar2 tablespoon
  1. To make the syrup, place the sugar and raspberry in a small saucepan and cook over low heat for about 25 minutes. Pass through a sieve and reserve.
  2. Preheat the oven to 180°. In a large bowl, whisk together the eggs, sugar, vanilla and zest. Add the melted butter, mix well and add the flour and yeast.
  3. Grease and flour the Madeleine mold. With the help of a pastry bag, place the dough in the center of each hole in the form. Fills about 2/3 of the space. Bake in the oven for about 10 minutes or until golden around the edges.
