  • Crystal sugar70 g
  • unsalted butter70 g
  • Sicilian lemon1 unit(s)
  • Chemical Yeast2 g
  • Pinch of salt to taste
  • Lemon zest1 unit(s)
  1. Reduce the butter + lemon juice, and set aside
  2. Beat the eggs with sugar, add the sifted flour, lemon zest and mix.
  3. Add the lemon butter, mix and finally the yeast. Grease the molds with coconut oil or butter and add a spoonful of the batter.
  4. Bake at 190° for about 10 minutes.
  5. Note: this Madeleine dough requires a rest time under refrigeration between 4h to 24h. Since the flavor of the dough is refined and gains consistency But if you don't have that time, no problem.
