  • Mozzarella cheese to taste
  • Ham to taste
  • Parsley to taste
  • Pepper to taste
  • Salt to taste
  • Olive to taste
  1. Pre-cook the potatoes and leave them al dente, leave them very firm. When the fork comes in, it's ready. Give the ice water a thermal shock to stop the cooking. Let it cool down.
  2. Grate the potatoes on a coarse grater. Season to taste!
  3. In a non-stick frying pan, put a little oil and add half of the potato as if it were a pancake.
  4. Add the coarsely grated mozzarella cheese and finely chopped ham, and chopped olives for those who like it, lol
  5. Cover with the rest of the potato and let it fry for a few minutes, when it's golden on the bottom it's time to turn and let the other side fry for 2 or 3 minutes.
  6. Transfer to a plate and sprinkle with parsley! Ready!
