- Grated Parmesan Cheese2 tablespoon
- Salt to taste
- Pepper to taste
- Start by cutting off the hard, dark green ends of the leek, leaving the parts lighter and softer.
- Don't cut off the root tip, this will help keep the leek together as it cooks.
- Cut each leek in half and rinse well to remove dirt.
- Bring a large pot of water to a boil over high heat, add the leeks and cook until they start to soften, about 5 minutes.
- Remove from pan and place in a bowl of ice water to maintain color and stop cooking.
- In a large skillet, heat the oil over medium-high heat.
- Place the leeks cut side down in the skillet and cook for a few minutes until they are just starting to brown.
- Transfer to plates and sprinkle with grated Parmesan cheese and season with salt and pepper to taste.
