  • Yeast5 g
  • Water380 ml
  • Salt to taste
  • Rosemary to taste
  • Olive oil20 ml
  1. Let's start with the sponge, put 5g of biological yeast, 100g of wheat and 100ml of water, stir, cover and set aside
  2. After 35min, add this sponge to 400gr of wheat, 10gr of salt and 280ml of water and 20ml of olive oil
  3. With this dough well hydrated, we will make folds every 5 minutes.
  4. After the 4th fold it has already created elasticity and developed well
  5. Now we are going to make only 1 fold and let it grow between 45min and 1h.
  6. Place on a baking sheet, place your topping (here I used rosemary and coarse salt and more olive oil) for 25min at 200 degrees if your oven is gas, set to 250
