Pré aqueça o forno a 180°. Bata com um fuet, ou na batedeira com o batedor globo os ovos, o leite e o óleo.

Preheat the oven to 180°. Beat the eggs, milk and oil in a mixer with a whisk.

Peneire o açúcar e o fubá nos líquidos. Misture bem.

Sift the sugar and cornmeal into the liquids. Mix well.

Junte o fermento e a farinha peneirando. Misture bem, mas não muito, se misturarmos de mais vamos ativar o glúten e deixar a massa elástica.

Add the yeast and the flour by sifting. Mix well, but not too much, if we mix too much we activate the gluten and make the dough elastic.

Passe a massa para uma forma redonda untada com manteiga e fubá. De umas batidinhas na mesa para tirar o ar da massa. Coloque a forma dentro de uma outra forma maior, esse bolo cresce bastante. Leve ao forno por 40 minutos.

Transfer the dough to a round shape greased with butter and cornmeal. Tap the table to get the air out of the dough. Place the form inside another larger form, this cake grows a lot. Place in the oven for 40 minutes.

Desenforme o bolo ainda quente. Está pronto.

Unmold the cake while it is still warm. Is ready.

IMPORTANTE: Bolo de fubá geralmente não tem glúten, porém esse tem. O glúten está presente na farinha de trigo, e é ativado quando acrescentamos líquido e misturamos com bastante trabalho mecânico. Apesar de misturarmos pouco o glúten ainda está lá, porém não ativado. Se vc quiser um bolo de fubá sem glúten recomendo procurar outra receita. O acréscimo de farinha torna o bolo mais fofo. Bolo feito só com fubá costuma ficar mais massudo, porém ainda é uma delícia.

IMPORTANT: Cornmeal cake usually doesn't have gluten, but this one does. Gluten is present in wheat flour, and it is activated when we add liquid and mix with a lot of mechanical work. Even though we mix a little, the gluten is still there, but not activated. If you want a gluten-free cornmeal cake, I recommend looking for another recipe. Adding flour makes the cake fluffier. Cake made only with cornmeal is usually more massive, but it's still delicious.
