  • Egg for brushing1 unit(s)
  1. Place the fresh yeast, granulated sugar and warm milk in a bowl.
  2. Mix and let it rest for 5 minutes.
  3. Add the oil, butter, eggs and salt.
  4. Mix well and add the flour.
  5. IN THE MIXER: place the hook in the mixer and leave on the lowest speed, mixing the ingredients gradually. When it's already forming a dough, gradually add the cold butter in pieces. Increase the speed of the mixer a little and leave to beat for 10 minutes, until it is very soft and smooth.
  6. BY HAND: mix all the ingredients with your hands and, when you start to form the dough, add the pieces of cold butter little by little. Knead well with your hands until it is very soft and smooth.
  7. Shape the dough into a ball, place it in a bowl and cover with plastic wrap.
  8. Let rise for 1 hour, or until the dough has doubled in size.
  9. Sprinkle some flour over your countertop and place the dough on top.
  10. Roll out the dough with a rolling pin until it is just over 25 cm wide and 0.5 cm thick.
  11. Cut the dough so that it is exactly 25 cm wide and then mark 12 cm wide spaces. On these markings, cut triangles, with 12 cm being the base of each one. TIP: If you're not sure how to do this step, look at the image or watch the video for a more visual explanation!
  12. Pass the roller over each of the triangles so that it opens up a little more.
  13. Place cheese and ham on the wider base.
  14. Roll up starting at the widest base and going to the tip of the triangle.
  15. Repeat the process with the rest of the dough and place each croissant in a shape.
  16. Let rise for another 30 minutes.
  17. Beat the egg in a small bowl and brush over the dough.
  18. Bake in a preheated oven at 180°C for about 25 minutes. Enjoy!
